Peachy Minted Summer Beet Salad Recipe
Beets are very nutritious, containing:
- Folate
- Manganese
- Potassium
- Iron
- Vitamin C
Beet greens are also edible and delicious! They can be eaten raw as part of a salad or they can be eaten cooked. Try them both ways to figure out your favorite!
Ingredients
- 4 medium beets cut into bite-sized pieces and steamed until tender
- ¼ cup olive oil
- ¼ cup Olive the Best peach balsamic vinegar or other flavored balsamic of your choice (This is a great way to support Flagstaff-owned shops!)
- Juice of one lemon
- ½ medium red onion, chopped finely
- ¼ loosely packed mint leaves cut into strips
- Salt and pepper to taste
Time needed: 40 minutes
Instructions
- Steam beets
To steam beets, place in a steamer above 2 inches water. Bring to a boil over high heat and cover. Turn down heat to medium. Steam for 30 minutes, until you can pierce the beet to the middle with a knife or skewer. After steaming beets, cool them to room temperature.
- Combine
Gently mix beets with remaining ingredients and chill
- Season
Add additional balsamic, olive oil, or lemon if you prefer more dressing
- Extra flavors
Serve with additional mint, crumbled bacon, walnuts or pistachios, and/or goat cheese. Enjoy!
