Peachy Minted Summer Beet Salad Recipe

Beets are very nutritious, containing:

  • Folate
  • Manganese
  • Potassium
  • Iron
  • Vitamin C

Beet greens are also edible and delicious! They can be eaten raw as part of a salad or they can be eaten cooked. Try them both ways to figure out your favorite!

Ingredients

  • 4 medium beets cut into bite-sized pieces and steamed until tender
  • ¼ cup olive oil
  • ¼ cup Olive the Best peach balsamic vinegar or other flavored balsamic of your choice (This is a great way to support Flagstaff-owned shops!)
  • Juice of one lemon
  • ½ medium red onion, chopped finely
  • ¼ loosely packed mint leaves cut into strips
  • Salt and pepper to taste

Time needed: 40 minutes

Instructions

  1. Steam beets

To steam beets, place in a steamer above 2 inches water. Bring to a boil over high heat and cover. Turn down heat to medium. Steam for 30 minutes, until you can pierce the beet to the middle with a knife or skewer. After steaming beets, cool them to room temperature.

  2. Combine

Gently mix beets with remaining ingredients and chill

  3. Season

Add additional balsamic, olive oil, or lemon if you prefer more dressing

  4. Extra flavors

Serve with additional mint, crumbled bacon, walnuts or pistachios, and/or goat cheese. Enjoy!
